Opinions for Good Food Island Please ?

Hi All - I'd welcome some opinions about which Caribbean Island and/or resort would be a good destination for 2 (slim!) good food lovers - especially fish. Not just top class hotels, but also for good local restaurants. We've been to Barbados once (during an October - oops - wet) but we're probably going in mid February 2008. Thanks and regards, Alan.
