Prague at christmas

I am taking my girlfriend to prague on the 10th til 17th december. Is this a good time to go. Will we experience everything prague has to offer at christmas or do you have to on 25th to see everything.

We are thinking of getting an apartment instead of a hotel as they are alot more spacious and alot cheaper.

I was told that if you book in advance you could loose your money. Why is this. I was hoping to book soon so I do not have to worry about money for accommodation around the time we go.

We seen the hotel pinkas which is in old town square. Is there any other good apartments and does anyone recommend them over hotels.
