Use your taxi driver for tips. Don't be shy about asking, they know what tourists go to see and will delight in taking you to the waterfalls, spice plantation or crocodile tour.
Ask around for best restaurants. Food varies greatly in quality from place to place. You can't go wrong with a quick tandoori meal from a beach shack or some fresh seafood, straight out of the sea. Prices are low so you can treat yourself to some of the best seafood you've had in your life.
The people are generally the most welcoming and friendly to tourists I've ever encountered. Though there are hawkers and beggars on the beach, but many people come up to speak to you and meet you, not because they want anything, or are trying to rip you off, but because they are genuinely being warm, open and friendly, as is clearly their way.
One exception is the scratchcard scam. I didn't get stung by this, but some bloke on a moped told me I'd won some amazing prize and I had to come with him on his bike to collect it. I don't know what the angle is, but I assume that once they get you there, you have to pay for something and then something else etc. Needless to say, I told him I was already a billionaire and didn't need his prizes. I think this scam is run in other resorts in other countries too. I'd advise finding a polite way of saying bog off and walking away.

Take £££ with you to change...you;ll get a better rate than $$$

Get a Nationwide Card and use ATM - don't bother with cash- easily lost or stolen.

Watch out at the Airport. The toilet woman wants a pound coin and then the porter who takes your case about 2 yards when you can put them on a trolley and wheel them also wants a pound coin.
I just tap my pocket and say = no money yet.
When you see the guys with the elephant they want loads of money to have you photo taken with them - be warned.

yeah it cost me a total of 5 pounds to get my case from airport to hotel it was ridiculous plus be aware of goans asking you to change 10 pound coins for a 10 pound note as they put euros amongst the coins to rip you off!
