How about trying to book direct with a hotel. I have and found it was a little cheaper.
I've been looking at what will be open aswell. I've booked Xmas dinner with our hotel so that's that one sorted. I'm not there for New Year ( pity).
And when you ask what will be open, do you mean shops or tourist sights?

And Ice skating (falling down) at the Rockerfeller is on my list to do... about 3 hours after I get there.

2008. I see now. lol Here's what I've been browsing through for this year.
I've been looking at opentable.com for restaurants that will be open on Xmas Day. As it's still quite early, most haven't got their availability online yet, hence we have gone with our hotel for that. But it's still a good resource.
Also, I have been looking at http://gonyc.about.com/ for a good lot of info.
And then there's the general clicking of the internet, one click leads to another. lol

Try the Days Inn North Bergen. It is just on the New Jersey side of the Lincoln Tunnel and takes about 8 mins to The Port Authority by public Transport.
