I personally do not think there is much to choose between these two ships, maybe Destiny is slightly bigger but once on board you really do not notice this.
So your choice should be your preferance over which itinerary to do, both would guarantee you sunshine. shorter flight for the Red Sea, but I love cruising the Caribbean, except in September/October.
If the price is good for the Caribbean then choose that first, as there are often great deals for the Red Sea cruise, so that could be done should you spot one in latter years.
For the kids I would also pick the Caribbean, it's a lot easier to do your own thing when going ashore.
