camel trekking

hi, i'm going to Tunisia next tuesday (9th oct) with my boyfriend, we have just booked the flight and the hotel when we first get to Tunis for 3 nights (amilcar hotel, sidi bou said, anyone know what this is like?) then we are going to rent a car and travel around the country rather than staying in one place.
I was wondering, we want to do the 1 night camel safari, does anyone know what we can do with out luggage during that time? We will have 2 large backpacks, and not sure if it's advisable to take ALL of our belongings into the desert with us. Has anyone got any ideas what to do as most people book their trips via hotels therefore leaving there belongings in their rooms. We won't be able to do this of course.

Has anyone actually travelled the country as most people who have gone to Tunisia seem to have just stayed in the same hotel for 1-2 weeks. Any advice on where/where not to go/do?
