hotel pools closed in November?

Hi, my boyfriend and I are thinking about going to Turkey in November but someone told me that most hotels close their pools and water parks in November til March - is this the case and is it most hotels?

Can anyone recommend a hotel and/or area with plenty to do during the day (activities and places to visit) to keep the boyfriend entertained but isn't too busy and noisey in the evenings? And are temperatures warm enough to sit on the beach?
