Santorini next May -where to go

Hi looking to book next May for Santorini, two resorts sound fab, Kamari or Perissa - where is the best place for traditional greek tavernas, nice beach, reasonable amount of places to get a nice bottle of wine and meal, but no karaoke bars or sports bars!!

Of the two Perissa is the best and more Greek.Lots of trad tavernas on the beach road and side streets.Good beach of black very fine pebbles so no problems with sand .Good swimming and clear water though it may feel chilly in May. Kamari is very commercialised now with lots of tacky shops etc.Would use the resort as last choice. Might add we hace had 40 holidays in Greece and always try to find the real Greece. Kamari is not. Hope this helps.
